All components wild fermented in varietal batches. Chardonnay and Sauv. Blanc cold-soaked on full skins for 48 hours before pressing to 300L aged barrels for primary fermentation. Fiano primary fermented on full skins in a small open vat before pressing to 300L barrels also. Full malolactic fermentation on lees in same barrels and then barrel-aged for 10 months, before bringing together for bottling. Bottle-aged for 18 months before release.

Grapes:
86% Chardonnay + 9% Malolactic Sauv. Blanc + 5% Fiano. 
13% Alc/vol.

Tastes:
White peach, apple blossom, lemons. Bright and savoury with some subtle richness. Late Spring air.
